Chocolaty Tiramisu Parfaits:
This simple version of tiramisu is just as elegant as the classic Italian dessert. The purchased ladyfingers help cut down on time when preparing this dessert. The ladyfingers are layered in glasses with the cheese mixture, espresso, and chocolate to create an appealing display. The espresso and chocolate blend together for a taste no one can resist. Ingredients:
1 8-ounce carton mascarpone cheese
1 cup whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla
1/3 cup chocolate- or coffee-flavored liqueur
1 3-ounce package ladyfingers, cubed
3/4 cup brewed espresso or strong coffee
3 ounces bittersweet chocolate, shredded or finely chopped
Directions:
1. In a large mixing bowl beat mascarpone cheese, cream, powdered sugar, and vanilla with an electric mixer on medium to high speed just until soft peaks form (tips curl). Fold in the liqueur just until combined.
2. Divide half of the ladyfinger cubes among eight 6-ounce parfait glasses or sundae glasses. Drizzle with half of the espresso. Top with half of the mascarpone mixture. Sprinkle with half of the chocolate. Repeat layers once. Cover and chill for 1 to 24 hours before serving. Makes 8 servings.
