1 onion, minced
1/2 cups celery leaves and stalks
1 bay leaf
4 sprigs parsley
1 sprig thyme
1 whole clove
1 cup cold water
1 teaspoon salt
1 tablespoon flour
1 tablespoon butter (room temperature)
1 pint milk, scalded
salt, pepper, nutmeg, to taste
1 egg yolk, well beaten
2 cups light cream or undiluted evaporated milk
fresh parsley and paprika (for garnishing)
