Root Beer Float Cupcakes






Ingredients


Cake:

2½ cups old-fashioned style root beer (like A&W or Dads)
2 tsp. vanilla extract
2 cups dark brown sugar
1 cup butter
2 eggs
3 cups all purpose flour
1 Tbs. baking powder
2 tsp. baking soda
1 tsp. salt
Root Beer Glaze:
4 cups confectioners sugar
½ cup root beer
3 Tbs. vegetable oil





Directions:

1. Preheat oven to 350ºF.



2. In a bowl, mix together root beer schnapps, root beer, and vanilla extract. Set aside.



3. In a separate bowl, cream together butter and sugar until light and fluffy.



4. Add eggs, mix until smooth



5. Sift in flour, baking soda, baking powder and salt.




6. Mix with hand mixer on low, while slowly pouring in root beer mixture.



7. Mix until smooth and lump free.



8. Pour into lined cupcake pan. (Use foil cupcake liners to avoid “leakage” later.) Fill nearly to the top, you may think its over-filled, but it puffs up perfectly this way. Don’t be tempted to use more than 24 cupcake cups.




9. Bake for 15- 20 minutes, until golden brown and cake springs back when touched.




10. While cupcakes are baking, prepare your butter cream and root beer glaze. For glaze, put all ingredients into a bowl and mix with a whisk until smooth and lump free.




11. To assemble, start by letting cupcakes cool, still in the pan.




12. While still slightly warm, pour 1 Tbs. of root beer over each cupcake. Pour on slowly to allow to soak in.




13. Once the root beer has soaked in and let sit for a few minutes, pour a couple tablespoons of glaze over each cupcake.



14. When the glaze sets up a bit and isn’t too runny, put a “scoop” of buttercream atop each. For an added touch, you can even place a root beer barrel candy on each one.

Arizona Chicken


Need a quick and easy supper idea, then try this Arizona Chicken recipe tonight for something new and different. Makes a easy kids supper suggestion as well.

Ingredients:

6 boneless skinless chicken breast halves (4 ounces each)
1/4 cup canola oil, divided
1 medium onion, sliced
4 cups chopped fresh tomatoes
2 celery ribs, sliced
1/4 cup water
1/4 cup sliced pimiento-stuffed olives
2 teaspoons garlic powder
2 teaspoons dried oregano
1 teaspoon salt, optional
1/4 teaspoon pepper
1/2 pound fresh mushrooms, sliced




Directions

In a skillet, brown chicken on both sides in 2 tablespoons of oil. Remove and set aside. In the same skillet, saute onion in remaining oil until tender. Add the tomatoes, celery, water, olives, garlic powder, oregano, salt if desired and pepper; bring to a boil.
Cover and simmer for 15 minutes. Return chicken to pan. Simmer, uncovered, for 15 minutes. Add mushrooms; simmer 15 minutes longer or until a meat thermometer reads 170°. Yield: 6 servings.

Nutritional Facts One serving (prepared without salt) equals 277 calories, 13 g fat (0 saturated fat), 73 mg cholesterol, 137 mg sodium, 11 g carbohydrate, 0 fiber, 29 g protein. Diabetic Exchanges: 3 lean meat, 2 vegetable, 1 fat.

Chocolate Mousse Cake. This dessert is great for a romantic dinner or holiday dinner; it is dramatic and delicious!





Chocolate Mousse Cake Recipe:




Ingredients
:


11 ounces cream cheese, softened
2/3 cup sugar
6 eggs
1/3 cup whipping cream
1 tablespoon vanilla extract
9 ounces semisweet chocolate chips, melted
Chocolate Crust (recipe below)
Whipped Cream Topping (Instructions below)
sprinkling of cocoa powder



In a large bowl, beat together 11 ounces softened cream cheese and 2/3 cup sugar, using medium speed of an electric mixer. Add 6 eggs, one at a time, beating well after each addition. Add 1/3 cup whipping cream, 1 tablespoon vanilla, and 9 ounces melted semisweet chocolate chips. Beat at low speed, until blended. Pour into Chocolate Crust. Bake at 375 degrees (F) for about 30 minutes, or until edges are firm, but center is still soft. Cool to room temperature. Cover with plastic wrap and chill for 8 hours or overnight. Use a knife to loosen the pan and remove the cake from the pan. Spread Whipped Cream Topping over the top of the cake. Lightly sift cocoa powder over the top of the topping. Chocolate Crust Recipe



Ingredients:


1/3 cup butter
2 ounces semisweet chocolate chips
1 1/3 cups fine, dry breadcrumbs
½ cup sugar



Directions:



Melt 1/3 cup butter in a small, heavy pot. Add 2 ounces semisweet chocolate chips. Stir over low heat until chocolate melts. Remove from heat. Stir 1 1/3 cups fine, dry breadcrumbs and ½ cup sugar into chocolate mixture. Blend well. Press into bottom and halfway up the sides of a 9-inch springform pan. Bake at 350 degrees (F) for about 8 minutes. Let cool.

17 uses for Alka-Seltzer!!




1. Safely Unclog A Drain
A great natural solution for unclogging the drain! Just drop four Alka-Seltzer tablets down the drain, followed by a cup of white vinegar and allow to stand for about ten minutes. Flush with a pot of boiling water. Doing this on a regular basis can help keep that drain clear. This also works to deodorize the drain.


2. Clean a Toilet In A Hurry
Drop two tablets in the toilet, wait 20 minutes for the citric acid to loosen the grime, scrub and flush. The bowl will be clean, shiny, and deodorized. Handy for a quick clean in case of uninvited, unannounced, surprise guests.


3. An All-Purpose Cleaner
Alka Seltzer can also be a good all around cleaner. Plop three tablets into 8 ounces of warm water. Once the fizzing stops, dip a sponge in the water (or you could fill a spray bottle) and wipe down counters, tiles and tubs. You can even place some in your sink and use as mop water. Just add five tablets to one half gallon of water.


4. Soothe Insect Bites
Drop two tablets in warm water, then soak a cotton ball in the solution. Place on the bite for 30 minutes for relief from the insect bites.


5. Catch a Fish
Fish love bubbles. Break a tablet in half and throw it out near your fishing line, or put a tablet inside your tube jig and cast off. The fish won’t be able to resist the stream of bubbles.


6. Remove Burnt On Food From Bakeware
Drop 5 tablets into a sink full of hot water and let your cookware soak for an hour or so. The burnt food will come off with ease.


7. Whiten and Brighten Your Laundry
To get rid of dingy yellow color on white cotton, soak your whites in a solution of a gallon of warm water and two Alka Seltzer tablets. Then hang your whites in the sun to dry to get rid of any lingering stains.


8. Deodorize the Fridge
For a clean, fresh smelling refrigerator, drop an Alka-Seltzer tablet in a cup of water and leave it in the refrigerator for a half hour. If there is still a smell in the refrigerator, then wash down the inside of the refrigerator with another Alka-Seltzer tablet in water.


9. Clean a Glass Jar, Flower Vase or Thermos
For those difficult to clean vessels with narrow-necks, and hard to reach places, drop two Alka-Seltzer tablets in, add hot water and swish it around until the tablets are dissolved and let it sit for an hour. Rinse, and the glass jar, vase or Thermos will be as clean as new.


10. Restore Stained Plastic Containers
Got spaghetti sauce stains on your plastic containers? Simply fill your container with warm to hot water and depending on the size drop 1-2 tablets into the water. Let sit for 30 minutes and the stains will disappear before your eyes.


11. Polish Your Jewelry
Drop two tablets in a bowl of warm water. Let your jewelry soak for about 20 minutes. It will look new again! (Note: This is not safe for pearls or opals.)


12. Build Rockets For Kids
Entertain little ones by heading outside with an empty film canister, filled halfway with warm water. Drop in half a tablet, snap on the lid and place the canister upside down on the sidewalk or driveway. Take a step back and watch your rocket blast off!


13. Clean Your Coffeemaker
Fill the water chamber of the coffeemaker and then drop in three tablets. When the Alka-Seltzer has dissolved, put the coffeemaker through a brew cycle. This will clean out all the internal components. Run through another plain water cycle before using the machine again for coffee.


14. Help For Nicotine Addiction
If you’re trying to quit smoking Alka-Seltzer can help. Take two tablets three times a day to relieve nicotine withdrawal symptoms and curb cravings.


15. Cure Urinary Tract Infections
Showing signs of a urinary infection? Take two tablets in a glass of water as soon as you notice symptoms. Results are almost immediate. Keep in mind that Aspirin is a main ingredient in Alka-Seltzer so those with Aspirin allergies shouldn’t use it.


16. Clean and Deodorize A Cooler
After an outing or trip, add about 1 inch of water to the bottom of your cooler, drop 4 tablets in, and let sit for an hour. After an hour, rinse and dry. All smells will be gone and it will be clean and ready for its next use.


17. Clean Dentures
Drop an Alka-Seltzer tablet into a glass of warm water, and then drop your dentures into the glass for about ten minutes. The citric acid and carbonation will remove the toughest stains from your dentures and other prosthetic dental work. This is an excellent substitute for more expensive denture cleanser products.

Oreo Stuffed Chocolate Chip Cookies


recipe from the fantabulous Jenny of Picky Palate. The kids will take and love this simple dessert recipe for a moist and tasty cookie.



Ingredients:


2 sticks (1 cup) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 pkg. Oreo cookies



Directions:



Preheat oven to 350 degrees. Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla.


In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.


NOTE: Some bakers have had some trouble with their dough spreading too much during baking. If that becomes a problem, throw the dough balls into the fridge for a quick chill before baking. That should solve the dilemma beautifully:-)


Makes about 2 dozen VERY LARGE cookies.

Peanut Butter Cup Tart

Peanut butter and chocolate come together for an indulgent dessert. Makes a simple quick dessert idea anytime come and try it out today.




Ingredients:

9 oz chocolate wafer cookies (1 box)
2 oz bittersweet chocolate, coarsely chopped
5 Tbsp butter, melted and cooled to room temp
8 oz cream cheese, room temp
1 cup creamy peanut butter
1/2 cup sugar
1 tsp vanilla
1 cup heavy cream
4 oz semisweet chocolate, chopped
1 Tbsp butter
1/2 cup heavy cream
6 peanut butter cups, coarsely chopped





Instructions:


Preheat oven to 325.
In a food processor, finely grind the cookies and bittersweet chocolate.
Add the butter and pulse until well incorporated and moist clumps form
Transfer to a 9-inch tart pan with a removable bottom. Press the crumbs evenly into the bottom and up the side.


Bake until set, about 8 minutes. Cool completely on a wire rack.
In the bowl of an electric mixer, beat the cream cheese, peanut butter, sugar, and vanilla until light and fluffy.


In another bowl, beat 1 cup heavy cream until stiff. Fold the whipped cream into the peanut butter mixture until well combined.
Evenly spoon into the cooled crust. Place the tart in the fridge to set while making the topping.
Place the semisweet chocolate, 1 Tbsp butter, and remaining cream in a heatproof bowl. Microwave in 30 second burts until hot. Whisk until smooth.
Pour the chocolate evenly over the tart. Garnish the edges with chopped peanut butter cups.


Refrigerate until set, at least 4 hours.

Peanut Butter Ice Cream Sandwiches


A easy and simple peanut butter ice cream sandwich idea for the kids as well as the grown ups. Who don't love peanut butter and ice cream together. Take and try this out with the kids with summer comming up. This is sure to be a hit with the kids and all there friends.



Ingredients:


For the Peanut Butter Cup Ice Cream:



1-1/4 cups smooth peanut butter
3/4 cup granulated sugar
1-1/4 cups whole milk
2 cups heavy whipping cream
1-1/2 tsp vanilla extract
1-1/2 cups chopped peanut butter cups (8-10 full-sized ones)




For the Chocolate Cookies:



12 tbsp butter, at room temperature
1 cup granulated sugar
2/3 cup dark cocoa powder
1 large egg
1-1/2 tsp vanilla extract
1-1/4 cup all purpose flour
Extra flour and cocoa for dusting





Directions:


For the Peanut Butter Cup Ice Cream:
- Make sure your ice cream maker has been in the freezer overnight before starting.
- In the bowl of an electric mixer, beat together peanut butter and sugar until smooth. Add milk and mix on low until sugar is dissolved – about 2-3 minutes.
- Mix in the heavy cream and vanilla and beat until well combined.
- Pour the mixture into the ice cream maker and follow the manufacturers instructions for freezing, which usually takes between 20 and 25 minutes.
- When the ice cream is done, fold in the chopped peanut butter cups.
- To use this ice cream for sandwiches, line a 9×13″ pan with plastic wrap and spread the ice cream evenly in the pan. Cover with another layer of plastic wrap and freeze for at least 12 hours.
*To make the sandwiches with store-bought ice cream, just let a carton of ice cream soften enough to spread evenly in a 9×13″ pan.



For the Chocolate Cookies:


- In the bowl of an electric mixer, cream together the butter and sugar on medium speed until light and fluffy, about 3 minutes.
- Add the cocoa powder, reduce the speed to low, and let it mix while scraping down the sides of the bowl occasionally.
- Add the vanilla and egg and beat on medium speed until well combined.
- With the mixer on low, add the flour and mix until well combined.
- Wrap the cookies in plastic wrap and chill the dough for at least 4 hours.
- When ready to bake, preheat the oven to 350 degrees.
- Make a mixture of 50/50 flour and cocoa and dust surface to prevent sticking (the cocoa powder will keep the cookies dark brown once baked).
- Roll out dough to about 1/8″ thickness and cut out desired shapes. This cookie cutter will also be used to cutout shapes of ice cream from your 9×13″ pan.
- Arrange cutouts on a parchment paper or silpat-lined cookie sheet (don’t worry about crowding them; these don’t spread very much) and bake for 10-12 minutes.
- Allow cookies to cool completely on wire racks before assembling the ice cream sandwiches.




For Ice Cream Sandwich Assembly:


- Remove pan of ice cream from freezer and allow to soften for 5-10 minutes.
- Using the same cookie cutter as used for the cookies, cut out rounds of ice cream and sandwich the ice cream between 2 cookies.
- Return sandwiches to freezer or enjoy immediately.

SEX IN A PAN!


Here is a simple and easy cke recipe that is sure to be a hit, i's like sex in a pan. Come on over and check out this recioe today and see if you agree.


Crust:


1 cup pecans, chopped
3 tbsp white sugar
1/2 cup butter
1 cup flour



Cream cheese layer:


1 8 oz package cream cheese
1 cup powdered sugar (use 1/2 cup for less sweetness)
1 cup whipped cream or cool whip



Vanilla pudding:


1 package of instant vanilla pudding (5.1 oz or 144 g)
3 cups milk (use 2 cups if you want a firmer pudding)



Chocolate Pudding:


1 package of instant chocolate pudding (5.1 oz or 144 g)
3 cups milk (use 2 cups if you want a firmer pudding)


Last layer
2 cups whipped cream or cool whip
shaved chocolate





Instructions:



1.Preheat oven to 350 F degrees.


2.Spray a 9x13 inch baking dish with cooking spray.


3.In a mixer mix all the crust ingredients together and press the mixture into the prepared baking dish.

4.Bake it for about 20 minutes.


5.Prepare the vanilla pudding as per the instructions on the package.


6.Prepare the chocolate pudding as per the instructions on the package.


7.In a mixer add the cream cheese, powdered sugar and the cup of whipped cream. Mix until light and fluffy.


8.Let the crust cool. Spread the cream cheese mixture over the crust evenly. Spread the chocolate pudding over the bottom crust, then the vanilla pudding. Top with the whipped cream and sprinkle with the chocolate.


9.Refrigerate for a couple hours so that it sets.

I was afraid we would lose much of that famous flavor we crave. But, by replacing just a few of the fatty ingredients, we can make a version that will certainly leave you satisfied and not missing any of the fat! Check out the video of the Dr. OZ show below.

Oven Baked Tacos



Brown your ground beef and drain completely - then add refried beans, taco seasoning and about half a can of tomato sauce. Mix together and scoop into taco shells, (stand them up in a casserole dish).

Sprinkle the cheese on top and bake at 375 for 10 minutes!

Ingredients:


2 lb ground beef
1 can refried beans
1 can of tomato sauce
1 packet taco seasoning
1 oz shredded cheese
12 tortillas/taco shells






Directions




Start with the taco shells, buy them in the store or make em yourself. If you make them yourself, I don’t think you will ever go back to purchasing taco shells. All you need is some tortillas and cooking spray. We used some small, soft “taco” tortillas. We used the flour kind but corn is fine too.



First you want to steam them… Wet some paper towels and wring them out well. Layer the tortillas with the wet paper towels on a plate and then microwave (we did 6 at a time). Keep an eye on them, it should be about 30 seconds until they are steamed. Then lightly spray each side with cooking spray and drape each tortilla over two bars of the oven rack. It is wise to put a baking sheet below them to catch any oil from the cooking spray. Bake at 350-375 degrees for 7-10 minutes. You will be able to tell that they are browning & getting crispy. Take them out and set them aside!



Okay, now for the filling All you need is ground been (2 pounds), 1 can of refried beans, 1 can of tomato sauce, 1 packet of taco seasoning, shredded cheese, & your favorite taco toppings.



Brown the ground beef in a large skillet. COMPLETELY drain all grease and return to skillet. Over low heat, add refried beans, taco seasoning, and about half to two-thirds of the tomato sauce (you can eye this to see whats best, you don’t want the filling to be too runny or your tacos will be soggy on the bottoms). Blend well and scoop into the tacos (which should be “standing” in a lightly greased casserole type dish). Then just sprinkle the cheese over the top and bake. I think I did my at 375 degrees for about 10 minutes.

3 ingredient Simply Great Chicken




3 ingredient Simply Great Chicken - all you need is chicken, brown sugar and Italian dressing mix - and it only takes an hour!



Ingredients:



About 3 1/2 pounds boneless, skinless chicken
1 ( .7 ounce) packet of Italian dressing mix
1/2 cup brown sugar, packed



Directions:


Preheat your oven to 350 degrees Fahrenheit. Grease a 12 inch x 9 inch pan and set aside, and/or it may be preferable to line your dish with aluminum foil as the sugar tends to caramelize while baking.


Rinse chicken, pat dry with paper towels.


Combine and the dried Italian seasoning mix and the brown sugar, mixing together well.


Dip and press the chicken pieces into the mixture, coating front and back and place into your prepared pan, topside of the chicken facing up. Any extra coating that remains can just be sprinkled over the chicken.


Cook for 50-60 minutes or until chicken is done turning every 15 min and basting each time with the drippings with the final turn leaving the topside facing up for the last bit of baking.
